Sachant que l'École de Gastronomie FERRANDI offrait deux journées de visites guidées et qu'un ami de l'ITHQ était devenu membre de la direction de l'institution, un appel a suffit pour que nous ayons ... more »Knowing that the FERRANDI School of gastronomy offered two days of guided tours and a friend of the ITHQ became member of the management of the institution, a call was just so that we have right to a warm welcome and a personalized tour. In this large campus in the heart of Paris study of many young and old (1500 +) in the goal of becoming cooks, bakers, restaurant owners, but also graduate in administration of the related fields. Kitchen and pastry workshops follow each other and our host makes us see also two restaurants of application where we can attend cooking demonstrations. Among other things, the demonstration of duck blood we were much interested in. The duck cooked in only 17 minutes is cut out ahead by a student which unfortunately cut in cutting edge but nothing serious. Once dismembered pieces are placed in the duck press, the same press found at the Tour D'Argent, where you are given the number (from the beginning) ordered duck, $$$. So hurry pieces leave the blood that will be then bound to provide a succulent sauce to accompany the duck supreme. Very delicious! Ferrandi, is 25000 square meters dedicated to the training of haute cuisine. They are also two other centers with the Paris contributing to what we eat well in France and elsewhere.
